Mid-afternoons get really crazy on the days when I don’t want to have a heavy lunch. In summer when the days are longer, it becomes very tempting to go into those unhealthy cravings. This gets double when you are trying to lose weight and avoiding high carbs. This filling afternoon snack is one awesome choice for people like me who tend to get lazy during those summer days or the quiet fall afternoons where I just want to get over with the tiring day. I would just opt for a salad but then sometimes it feels like vegetable won’t be an option for me too. so
This filling snack is an excellent choice for people like me who tend to get sluggish during summer days or those quiet fall afternoons when I just want to get over with the day. I would just opt for a salad but then sometimes it feels like chopping too many vegetables won’t be my thing too. Therefore, I always keep some boiled or canned chickpeas handy and just be creative with them in the form of hummus or this salad. here is the recipe.
Chickpeas 1.5 Cup (Boiled or Canned)
Tomato 1 Medium (Chopped in cubes)
Cucumber 1 Medium (Chopped in cubes)
Potatoes 1 Large or 2 Medium (Boiled & sliced)
Tamarind sauce 1-2 tbsp.
(soak 1 tbsp. of tamarind pulp in 3 tbsp water overnight and keep it in the fridge. Take the seeds out from the mixture in morning).
Olive Oil 2 tbsp.
Salt to taste
Red Chilli flakes to taste
Cumin Powder 1 tsp.
Green Chilli 1 Medium (chopped)
Parsley leaves handful (chopped)
Mint leaves handful (chopped)
Garlic powder 1 tsp. (optional)
Sliced Black Olives 2 tbsp. (optional)
Preparation time: 5- 10 minutes Serves 2 people
Mix together chickpeas, tomatoes, cucumber and potatoes & green chilli.
Mix the salt, chilli flakes, cumin powder, garlic powder in the tamarind sauce to make a seasoning. Coat vegetables & chickpeas with the seasoning in a mixing bowl.
Drizzle Olive Oil and Garnish with Parsley,Mint & sliced black olives.
